Whole Chicken
Small Farm–Raised Whole Chicken
Our small farm–raised whole chickens come from birds grown with care on pasture and raised by hand on Berkshire Creek Farm. They’re allowed to forage, exercise, and eat a wholesome, non-GMO diet, producing meat with superior flavor, a pleasing texture, and naturally tender breast meat.
What you get
Whole chicken, typically 3–5 lbs (weight may vary)
Pasture exposure and room to roam
No antibiotics or growth-promoting additives
Flavor & cooking These birds have a rich, full chicken flavor and hold up well to many preparations: roast whole with herbs and citrus, spatchcock for quicker even roasting, smoke low and slow, or braise for fall-off-the-bone meat. The skin crisps beautifully when roasted at high heat; the meat stays moist thanks to healthy, active birds.
Simple roasting method
Preheat oven to 425°F. Pat chicken dry.
Season cavity with salt and pepper and stuff with halved lemon and a few herb sprigs (thyme or rosemary). Rub skin with oil
